Henrique Herbert voted Best Cheesemaker in Brazil
Last Saturday night, April 13th, Henrique Herbet, from Paraná, was chosen as the Best Cheese Maker in Brazil during the 2024 Brazil Cheese World Cup, which is being held at the B32 Theater between April 11 and 14, on Avenida Faria Lima in São Paulo.
For the competition, Henrique presented a soft cheese with an intense flavor that he called “dusk of the West”. “It's a semi-cooked pressed dough, slightly elastic in texture, but with a firm, closed mass. The flavors are acidic, fresh, lactic, creamy, mature meat, complex, with a distinctive look," explains Henrique, who is also Master Cheesemaker at Queijaria Flor da Terra, as well as supervisor and technical head of the Biopark.
Henrique is a Food Engineer and holds a Master's degree in Bioscience from UTFPR. During the World Cheese Competition, he was helped by Kennidy de Bortoli, also a cheese maker at Biopark.
In second place in the Best Cheesemaker Contest was Sandra Piovesan, from Sítio Esperança, from Rio Grande do Sul. Tayllanny Tatá's Cabin, from São Geraldo do Araguaia-Pará made the top 3.
COMPETITION HAD 4 STAGES
* In the first test, in Nova Erechim/SC, on January 20, 2024, the cheesemaker was tested on his professional know-how and his ability to produce cheese in conditions different from his routine.
* The second tasting tested the ability to mature a cheese under special conditions, in their own cheese factory.
* The third tasting tested the ability to produce cheese in the comfort of your own work environment.
* The fourth stage took place on Saturday, April 13, 2024, as part of the Brazilian Cheese World Cup.
Anderson Magalhães voted best cheese maker in Brazil

Also on Saturday evening, the World Cheese Championship Brazil 2024 elected Anderson Magalhães, from São Paulo, as the Best Cheesemaker in Brazil. Anderson is a cheese consultant (fromager) for the Pão de Açúcar Group. Unlike the cheesemaker, who produces the cheese, the fromager is like a cheese merchant. The competition is judged on passion for the craft.
In order to select the Best Cheesemaker in Brazil, the judges took part in tests involving the preparation of a cheese board, the preparation of a work of cheesemaking art, general knowledge and an oral presentation.
The competition is sponsored by Concours de Meilleur Fromager du Monde of the Mondial du Fromage de Tours in France. The winner was guaranteed a place at the next edition in France in September 2025. As well as recognition for his work, Anderson also won a ticket from São Paulo to Paris to take part in the event in France.
This was the second time that the Best Cheesemaker Contest was held at the World Cheese Fair and, in addition to Anderson, Cristiane Abade from Londrina, Paraná, came in second place, and Juliana Pereira, from Socorro, São Paulo - in third place.
