Since 2014, the cheeses have been made at S\u00edtio Recanto Santa Maria, using the recipe of their ancestors. The high-quality milk sublimates the terroir of the Serra da Mantiqueira. The altitude of 1,200 meters, simplicity and naturalness, as the cheeses have no chemical additives, all contribute to the flavors. On a trip to India, she saw buffalo milk and decided to raise some. Today, the farm looks after a herd of 400 buffaloes, which produce 13,000 liters a month and are transformed into mozzarellas, burratas and ricotta.
