La premi\u00e8re consistait \u00e0 fabriquer\u2026 <a href=\"https:\/\/www.estadao.com.br\/paladar\/so-queijo\/quem-sera-o-melhor-queijeiro-do-brasil\/\" data-type=\"link\" data-id=\"https:\/\/www.estadao.com.br\/paladar\/so-queijo\/quem-sera-o-melhor-queijeiro-do-brasil\/\" target=\"_blank\" rel=\"noreferrer noopener\">un fromage au lait cru<\/a>, \u00e0 Nova Erechim-SC, le 20 janvier. Le deuxi\u00e8me d\u00e9fi a \u00e9galement d\u00e9but\u00e9 dans le Sud\u00a0: chaque \u00e9quipe a re\u00e7u deux fromages au lait cru de la fromagerie artisanale Pardinho \u00e0 transformer par l\u2019art de l\u2019affinage. Ils devront refl\u00e9ter les couleurs \u00e9clatantes du Br\u00e9sil, et l&#039;utilisation de colorants synth\u00e9tiques est strictement interdite. L&#039;incorporation d&#039;au moins un fruit ou l\u00e9gume dans la composition des fromages est obligatoire. PHOTO : Andressa Fusieger\/SerT\u00e3oBras<\/figcaption><\/figure>\n\n\n\n<p>Le pr\u00e9sident fran\u00e7ais du concours, Arnaud Sperat Czar, souligne\u00a0: \u201c\u00a0Dans cette phase, la capacit\u00e9 du fromager \u00e0 produire un fromage r\u00e9pondant \u00e0 des normes sp\u00e9cifiques, dans l\u2019environnement convivial de la fromagerie, sera \u00e9valu\u00e9e. Chaque participant peut produire autant de fromages qu\u2019il le souhaite pour atteindre l\u2019objectif final\u00a0; ces fromages ne porteront pas le label de cas\u00e9ine SerT\u00e3oBras, mais seront tous d\u00e9gust\u00e9s lors de la finale du concours \u00e0 S\u00e3o Paulo.\u00a0\u201d.<\/p>\n\n\n\n<p>Le principe fondamental est que le fromage doit poss\u00e9der des caract\u00e9ristiques sensorielles qui plaisent au palais du consommateur \u2013 autrement dit, il doit \u00eatre d\u00e9licieux ! C\u2019est pourquoi, cette ann\u00e9e, le comit\u00e9 d\u2019organisation a opt\u00e9 pour la production de fromages destin\u00e9s aux grandes occasions, mettant l\u2019accent sur un caract\u00e8re festif qui \u00e9voque une v\u00e9ritable explosion de saveurs.<\/p>\n\n\n\n<p>Nous souhaitons \u00e0 tous les participants un excellent travail, empreint d&#039;inspiration, de patience et d&#039;application des connaissances que chacun poss\u00e8de d\u00e9j\u00e0.
